The BEST Homemade Pizza and a Thank You


I finally decided to make the pizza that I’ve been eyeing since Ashley posted it about it on her blog. I changed the recipe up a bit but I give full credit to Ashley for this amazing pizza recipe!

Millet Buckwheat Pizza Crust

  • 1/2c raw buckwheat flour [ground from raw buckwheat groats)
  • 3/4c millet flour ( I couldn't find Millet flour so I ground up 3/4 cup Hulled millet, I recommend grinding up 1 full cup of Hulled millet instead of 3/4 cups)
  • 1c water
  • 1T olive oil
  • 1T unsweetened applesauce
  • 1/2t garlic powder
  • 2t oregano
  • 1t rosemary (omitted)
  • 1.5t basil
  • 1t thyme
  • 1/4t sea salt

Directions:

  1. Preheat oven to 375*
  2. Whisk all ingredients together until well combined.
  3. Grease an 8-9” round pan.
  4. Pour batter into pan.
  5. Bake on middle rack for  40 minutes.  Edges should be slightly brown and pulled away from the pan.  The top will be cracked.
  6. Take out of oven and slide a knife around the edge of the pan.
  7. Put a large plate upside down over top of the pan.  Hold the pan and plate together + flip, so the crust falls to the pan.  Flip over with your hands so the top of the crust is now facing up.
  8. Top with toppings + bake on your oven rack/baking sheet/etc until ingredients are heated through.

I love how easily this pizza cut into fourths! No breakage!

Overall, this is one of the best homemade pizzas I have made from scratch. I should have cooked it a little bit longer to make it a little more crunchy but it was really good all the flavors from the spices combined perfectly! I only have a slice left and I made this last night. I had some for lunch before my 5.7 mile run in 60 minutes! Can you believe it? I finally did it! One hour without stopping!

After my run I was pretty exhausted but I cooled down with a slow 1 mile walk. Total miles today 7 big ones!

Post workout Smoothie

  • 1/5 silken tofu
  • 1 Container of Chobani yogurt –(I just got my Chobani yogurt in the mail today. I can’t wait to try all the flavors they sent me! So far I’ve tried two of them. I had the blueberry flavor yesterday, which I’ve had before, It was very good but I did enjoy the flavor I used today better. Today, I used the Vanilla flavor Chobani yogurt for this smoothie)
  • lots of blueberries and blackberries 2 large handfuls
  • 7 Ice cubes
  • 1 tablespoon Vega Shake-n-go Vanilla protein powder

My smoothie was once again too big for a cup….

The silken tofu  helped make my smoothie less watery. I had never tried this before but now I will for sure be using this in my morning monsters.

Last night, after making my homemade pizza, I headed out to celebrate my friend’s 21st birthday!

Tonight Pete’s coming by after his practice and we may head out to continue celebrating my friend’s 21st. I’m thinking about whipping up another one of those pizzas before leaving so I’ll talk to you all later….

It’s a Brand NEW day!


Today the soundtrack of my life was BRAND NEW By Lil’ Wayne.

Why?

Well I did some Brand NEW things today.

After class today I  headed over to my favorite hair salon and tweaked my hair color a bit. Brand NEW hair always excites me…It was a totally spur of the moment thing, I always do that!

I really like how my stylist left the bottom half darker than the top!

 

I'm back to a honey brown instead of a fake blonde! (please excuse my lake of makeup, I came from my crazy interval workout LOL)

Lunch was something brand NEW to my tastebuds. I finally tried TUNA!

Lunch:  Grilled Tuna Sandwich STUFFED with Smoky Corn and Red Pepper Salsa!

I've never had tuna in my life but I'm now I'm a huge fan! Chicken of the Sea you didn't fail me!

I used this brand NEW Ezekiel bread for my Tuna Sandwich today, I'm a huge fan of this bread and would definitely recommend it for French Toast or Grilled sandwiches. It made me crave my Pumpkin Bread because they both have a great thick consistency.

A Colorful (Funfetti) Breakfast


Today I decided to make another “Funfetti in a bowl” breakfast. I’m thinking about changing my Blog’s name to, “Funfetti Girl“… What do you think? LOL

This breakfast was a great start to a relaxing Monday. I decided to wake up a extra early today to avoid the rushing feeling I had on Friday when I overslept and snoozed my alarm before class. Not such a great Friday to say the least. Monday was much better :)

This Funfetti Bowl contained:

  • 1 container of Greek Yogurt
  • large handful blueberries
  • 1/2 scoop of protein powder
  • and a couple sliced peaches
  • A couple squirt of food color to give it that COLORFUL kick!
  • 300 calories :)

My breakast looked a little boring so...

Delicious Bites... I feel like I have ice cream for breakfast everyday :)

Decided to go grab some WHOLE FOODS for lunch after my 6.5 mile run… I am so sick of eating tofu and yogurt for protein so I went with a veggie burger (which I think has protein, oh well who knows, it tasted GREAT though!)…

Do you guys know of any good ways to get protein into your diet if your a vegetarian? What’s your favorite post workout snack? I usually just have an apple with yogurt and some sort of extra protein after a long run I need a change!

Does anyone know how many calories your post workout snack should be after a 6.5 mile run/walk? I would think its around 150-250 calories but I’m not sure if that’s right.

I finally decided to stick it out on the tredmill for 6.5 miles today! Never thought I could do that before but I proved myself wrong and now I can’t wait to get back on and do it again! I hope you all stay warm out there and safe… the Snow is a-comin! I think its going to be AWESOME to possibly have classes canceled for Wednesday. I’m already planning my workout based on the weather… I will for sure be shoveling snow the next 4 or 5 days…arms, get ready for hell! :)

Peanut Butter Crazies!


Made some delicious treats for my family today. My brother loves the Hershey Kisses Peanut Butter Cookies, I created a healthier version for him :)

Thanks to Lana at Another Healthy Habit I won a bunch of her goodies in the giveaway she was having! I can’t even describe how freakin’ EXCITED I am to get these amazing treats in the mail!!!! :) :)

 

Peanut Butter CRAZY Cookies

  • 2 cups whole wheat pastry flour, spelt flour, or unbleached all-purpose flour ( I used spelt)
  • 1 teaspoon baking soda
  • 3/4 teaspoon fine grain sea salt
  • 1 cup organic, chunky natural peanut butter
  • 1/2 cup maple syrup
  • 1/2 cup honey
  • 1/3 cup extra virgin olive oil
  • 1 1/2 teaspoons vanilla extract
  • 2 egg whites

Combined  flour, baking soda, salt in a small bowl. In a larger bowl combined all other ingredients. Pour the dry ingredients into the bowl with the wet. Then, Mix mix mix!

  • ADD INS:
  1. Protein Powder
  2. Strawberry preserves
  3. Chocolate Chips (Dark)
  4. Almonds
  5. Cacao nibs
  6. Cacao Powder
  7. Dried Cherry
  8. Vegan Chagave brownie
  9. Pumkin Butter

All mixed up, Now it’s time to start playing with the Add-ins!
