Greek Yogurt Pancakes with Homemade Pumpkin Butter!


After my 7 miler today (YES, you read that correct 7 big ones for me today!) I needed a filling dinner…

I wasn’t feeling like eating anything  except Pancakes so I decided to whip these up (see recipe here). I replaced the Pumpkin with Chobani Greek Yogurt since I was out of Pumpkin and they still tasted Great!

Rolled Oats/Apple Sauce/ Greek Yogurt/ Almond MIlk/Egg whites/Stevia/Cinnamon/Almond Extract/Baking Powder... topped with homemade Pumpkin Butter,Raspberry and Dark Chocolate Chips

Skyscraper high... yes I ate them all.

I knocked down the skyscraper and ate them one by one... it keeps me full to eat slower LOL

Breakfast was a GREEN MACHINE:

1 container Greek Yogurt (I use Fage or Chobani)/3 ice cubes/ handfuls of spinach, a small handful blueberries and half a scoop EAS protein powder Vanilla Flavor

Lunch was also a Green Machine, only not a smoothie, a green monster Soup:

While eating my Cheddar Broccoli soup I noticed a beautiful site from my window:

Like we don't have enough snow LOL

I can't believe it was snowing again! This stuff is going to take FOREVER to melt!

Today I woke up about 20 minutes earlier than normal to get in a mile run before breakfast.

My motivation to run this morning stemmed from my desire to get in shape for a basketball tournament I'm playing in March! gotta win it! :)

Walking up early like I did today is kind of out of the ordinary for me. Not because I don’t enjoy working out in the morning, (I actually prefer working out in the morning) but because my classes start so early most of the week and I usually can’t find the energy to get out of bed.Today was different.I felt sore from Jillian’s Kettleball Workout DVD but I had a lot more energy than usual!

Today’s Workout:

  • 1 Mile run in the morning
  • 2.5 mile interval run during lunch time

0-2      at       6.5

2-15              Alternate 30 second at 6.5 MPH 30 second at 8 MPH

15-17            7.0

17-20           4.0 at incline of 7.5

20-22          walk at 3.5

22-25          6.5

25-35          4.0 at incline of 7.5

  • 2.25 mile run in 25 minutes (After my Pancake dinner)
  • 1.25 fast speed walk at 4.5
  • TOTAL: 7 Miles for today! :)

I finally felt like I got into the “ZONE” that runners talk about… You know, when they feel more like they’re floating then running…
