Decided that today would be a really productive day and I was right. I pretty much finished all my homework for next week’s classes in the span or 2 hours of hard work! It’s amazing what you can do when you put your mind to it!
After getting all my work done I wanted to make a list of some of the amazing things I’ve learned from all your wonderful Blogs in the last week:
Lana taught me about Tabata runs…. 20 seconds of sprinting and 10 seconds of rest. I completed the tabata run on a treadmill set at 10 mph. I would sprint for 20 seconds, allow the machine to continue at the same speed, raise myself up and to the side to rest for ten seconds.
Something that Rach has taught me to remember and keep locked up in my mind to keep me feeling happy: “it’s all about letting go of the past. Everyone has a history of some sort and most of us have done things we’re not proud of at some point or another. But the point isn’t what we did in the past, but who we are today.” AMEN
Veggin out in the kitchen recently posted a A gluten free Carob/CHOCOLATE version of Katie‘s Pizzert which I’m dying to try!
Michelle just made some delicious looking Vegan Banana Bread Muffins! YUM
Kayla just made some Pumpkin Maple Cinnamon Oatmeal and after I read her post I decided to head to the kitchen for pumpkin snack myself:

1/3 Cup Pumpkin, 1 Container of Greek Chobani Yogurt Vanilla Flavor, hand ful of granola, lots of nutmeg and cinnamon!
This is what I did all day yesterday, Shovel time!… Needless to say I woke up this morning sore as ever in my upper back area. I don’t think I was shoveling “right” :/

My brother and I were out there for a couple hours, so I counted this as my major workout yesterday. I also walked 3 miles afterward… Decided to make a Chickpea Ricotta sauce for my Linguini last night and it turned out really good!


half a can of Chickpeas, 1/2 cup ricotta cheese, lots of mixed greens and tomatoes, 1/2 can of tomato sauce, Dash of salt and pepper, 1/2 tsp thyme, sprinkle of basil, oregano, chilli powder, 1/2 cup of diced yellow peppers, 1/2 a cup milk. Come to think of it I used pretty much everthing I had in my kitchen for this mish-mash sauce
My workout plan using weights still is not written out only because I got so much homework done today but I did manage to stick with my 45 Fitness February goal today and yesterday GO ME! Hopefully I’ll be seeing Pete tomorrow to celebrate our 10 Month! Not sure which restaurant we will be heading out to this week but I’m pumped! Pete mentioned to me that we should maybe do Greek town in Chicago because it’s where we had our first date. If we do I’ll for sure get some fresh yogurt from this great little place called Artopolis in Greek town, their stuff is to die for!
After finishing up all my work today I decided to bake Laury‘s Red Velvet cupcakes get ready for some food porn pics:

All that baking made me HUNGRY so I decided to whip me up some…..Winner Winner Fish Fillet Dinner:

Lettuce Tomatoes, Salsa, Tortilla Crusted Tilapa (my new dinner OBSESSION), one soft tortilla and one hard corn tortilla... hit the spot!
I’ve been meaning to use lettuce wraps for ever because I overuse breads sometimes lol, who doesn’t though?
I’ve totally been on a Taco kick lately, I think I’m feelin’ a middle eastern or Greek kick coming on soon

My fave greek food is grape leaves, and I like the dish that is like lasagna but I dont know how to spell it : p I dated a greek guy for 5 years, and his family was 100% greek, I pretty much tried every greek dish there is and it was all delish!!!

So glad you tried the cupcakes! I was just thinking I need to make them again for Valentines Day! Last time I made them was my brothers graduation party, and my family could NOT believe they were vegan (last time I used vegan icing ingredients)..and made with BEETS! I actually think the beets made it a great flavor! My uncle couldn’t stop eating them, haha. Glad you enjoyed
My best friend in high school was Greek. I want to say I have something really exciting for yah, but my fav is probably Greek salad

Greek salads are great! So flavorful with such little ingredients. I also love the greek salads because the real original ones have no lettuce in them just tomato cucumber pepers and onions! with lots of great spices delicious!

Love those cupcakes!!! And yay for starting weight training. You will notice such a difference. It really does build muscle and I swear I think I’ve developed more of a curve because my jeans are actually fitting better
Anything with chickpeas in it is okay in my book. Yum.
