National Peanut Butter Day!!!


Made these Honey Peanut Butter Bars for National Peanut Butter Day (Which is today, January 24th)

I Made up this recipe myself!

Servings Size: 15 big granola bars (can cut them smaller if you want)

  • 3 cups Granola Cereal (Kashi works fine too)
  • 1/2 cup dried cherries
  • 1/4 cup raisins
  • 1/4  cup sliced almonds
  • 3/4 cup honey (or less it was a little to much!)
  • 1/4 cup Sucanat
  • 3/4 cup Peanut Butter
  • 1 teaspoon vanilla
    1. Mix  cereal, cherries, raisins and almonds in a large bowl. Set aside.
    2. In a saucepan, mix honey and Sucanat Bring to a boil while stirring. Add peanut butter and vanilla. Stir just to blend well.
    3. Pour the wet mixture into the bowl with the dry and mix mix mix!
    4. Pour the mixture into a 9 by 13 pan and let cool for 1 hour, Cut into bars and serve!
I ended up drizzling chocolate chips on top of the bars:

Ok so I went a little chocolate crazy, oh well…

Yesterday I also made some appetizers before the Bears game (if you even call what  I watched a game, they might as well have not shown up!)

Brushetta and Zuchinni/Yellow Pepper Patties

Zuchinni Yellow Pepper Ground up Whole Wheat crackers and 1/4 cup Parm

Dinner for my consisted of several pieces of Brushetta, Green Peppers, Veggy dip (made with Fage yogurt!) and sliced up Zucchini patties!

The five grain Muesli is composed of:

  • Barley
  • Spelt
  • Rye
  • Oatbran
  • Wheat Germ

Extra add ins that I wanted:

  • Multigrain Flakes
  • Cinnamon
  • Goji
  • Apples
  • Bananas
  • Soy

Lunch today:

Everything Bagel with Laughing Cow Cheese, a Left over Zuchinni pattie and Apples with Cinnamon on the side!

Dinner was filling! Quinoa with Broccoli, Cauliflower, Cherry tomatoes and Fava beans in a lemon cream sauce.

Did a 3 mile run in 26 mins today, had some discomfort in my knee though, time for ice :(

I had knee surgery when I was 8th grade after tearing my ACL, MCL and lateral meniscus. It really sucked coming back from that injury and I don’t wanna overdo it with my knee on the tredmill tomorrow… maybe some elliptical instead to take the pounding off my knee and of course some Meditation (the one healthy habit I WILL be doing!)… I tried it today, wasn’t a big success maybe later tonight before bed I’ll give it a shot!

    I’ve never had an athletic injury…although my back is so tight today! i’m really bummed about it bc i’m in a lot of pain!!

    The only advice I know of would be stretch, ice, and don’t overdo it…I think you’ve got it all covered :) Great run by the way!

    • Yea knees are the worst to hurt. A women told me once her knee surgery hurt more than birth, I believe it. When i hurt mine the surgery was just unbareable…. I wish that on no one! take good care of yourself and your body cutie, love the invitations u sent out btw

  4. How did I miss Nat’l PB day? Ug…I’m sad now and those bars look awesome! I’m impressed you came up with the recipe yourself!

    As for injuries! I suffered a bad injury last march that took until September-ish to “heal,” although I have been goign to the chiropractor ever since and I swear that has helped immensly with my back pain. I think the trouble was a combo of too much exercise and not enough stretch and rest. I highly promote rest days now and days just dedicated to stretch! I feel so much better because of it!

  5. Yayy for Justin’s maple almond butter packs! And I think every day should be “national peanut butter day.” I actually had a stress fracture in my heel last year which suckedd… I think it was because I wasn’t taking enough rest days. So definitely take rest days and incorporate yoga/no-impact workouts! Loove the name of your granola btw, so cute :)

    Anywho, back in high school I strained my hip-flexers. I think I should have realized that I was starting to hurt and taken more time to stretch. Good running shoes are also a must. Make sure you go to a running specialty store for new shoes every 300-500 miles or 6 months. Yoga also works wonders. Get a free 20 minute 'Yoga for Runners' at yogadownload.com.

  7. Those bars look amazing!! Yum that chocoalte just MAKES them I bet! Sorry to hear about the knee pain. I haave actually been having some too, but in my non-surgery knee, which is never a good thing. Just rest up girlie!

  8. Those bars look so good! I have had a couple of running injuries in the past. For me, I can’t run more than 3 days a week because my body won’t allow it. Also, gradually increase your mileage (no mre than 10% a week). Some people need to increase by less, but try not to do more than that. If you are experiencing an injury, try to see if you were doing too much too soon.

    The PB granola bars have my mouth watering for sure!!!

    I used to run a lot in high school. My knees got bad…and a few years after that I swore off running. When I got certified as a personal trainer in 03′ and focused on sports rehab, I came to the realization that running wasn’t worth it for me. Some people are built better to run….for me…it was nothing but trouble!!! I also had slight tendinitis in my shoulders from tennis. I rehabed myself back though!!! Oh, and lingering neck injuries from a couple car accidents. And an ankle injury from a drunk night of dancing when I was 20 years old ;-) What a hott mess.

  11. You had me at peanut butter!!! I love peanut butter and those look awesome, I want to try to make something like that! I have a bunch of honey nut cheerios, maybe those will work :)

    I get knee problems a lot when I run. I’m training for a marathon now, so I’m hoping that I can go slowly enough as I build up mileage that I won’t get hurt. Scary though.
