A Colorful (Funfetti) Breakfast


Today I decided to make another “Funfetti in a bowl” breakfast. I’m thinking about changing my Blog’s name to, “Funfetti Girl“… What do you think? LOL

This breakfast was a great start to a relaxing Monday. I decided to wake up a extra early today to avoid the rushing feeling I had on Friday when I overslept and snoozed my alarm before class. Not such a great Friday to say the least. Monday was much better :)

This Funfetti Bowl contained:

  • 1 container of Greek Yogurt
  • large handful blueberries
  • 1/2 scoop of protein powder
  • and a couple sliced peaches
  • A couple squirt of food color to give it that COLORFUL kick!
  • 300 calories :)

Delicious Bites... I feel like I have ice cream for breakfast everyday :)

Decided to go grab some WHOLE FOODS for lunch after my 6.5 mile run… I am so sick of eating tofu and yogurt for protein so I went with a veggie burger (which I think has protein, oh well who knows, it tasted GREAT though!)…

Do you guys know of any good ways to get protein into your diet if your a vegetarian? What’s your favorite post workout snack? I usually just have an apple with yogurt and some sort of extra protein after a long run I need a change!

Does anyone know how many calories your post workout snack should be after a 6.5 mile run/walk? I would think its around 150-250 calories but I’m not sure if that’s right.

I finally decided to stick it out on the tredmill for 6.5 miles today! Never thought I could do that before but I proved myself wrong and now I can’t wait to get back on and do it again! I hope you all stay warm out there and safe… the Snow is a-comin! I think its going to be AWESOME to possibly have classes canceled for Wednesday. I’m already planning my workout based on the weather… I will for sure be shoveling snow the next 4 or 5 days…arms, get ready for hell! :)

Two Week Love Challenge!


Gretchen Rubin has inspired me to challenge all of you to a

Two Week Love Challenge

Good Houskeeping Magazine currently has an article written by Gretchen Rubin where she states how she decided to embark on a “happiness project” in order to make her life a little more lovin‘ and a lot less stressful. Her article was really inspiring and I thought it would be fun to challenge you all to a small “happiness project” too…

Challenge: Two Week Period February 1st-February 14th where you must give a “Gesture of Affection” to TWO people a day!

Description: Any small gesture counts, brushing the snow of someones car (since we have a lot that’s going to be coming in!), really taking the time to listen to someone, hugging your mom, helping your dad with some work, making the trip to the grocery store for the family. Whatever the gesture may be just make sure you are consciously recognizing that you are doing this!

Some Guidelines to Sum it up:

  • Two people a day for 14 days= 28 people total
  • You can’t use a “Gesture of Affection” on the same person more than 4 times ( So, 7 people is the minimum number of people you can have for the challenge if you do the math).
  • The “Gesture of Affection” has to be DIFFERENT for each person.
  • In order to participate you MUST link this post back to your blog so we can carry on the challange throughout the blog world

You may want to write down the gestures you have used on each person so you can see which gestures you felt were the most appreciated. Logging the gestures can help you see which ones gave you the best reactions and responses from people. IF you do decide to write down the gestures and post them on My Valentines Day Post (which is the day the challenge ends) I will be picking ONE lucky winner and Sending out a Mystery Gift Bag!

 

Then you can add these gestures into your mental cabinet and use them on people to gain a sense of happiness! I challenge you to really step outside of “normal kind gestures” and take it a step further! If you usually take your lunch break to do loads of paper work take the day off and write you co-worker a really nice note! Or if you love to bake bring those cookies to a friend you haven’t seen or heard from in a while. These gestures may be a little more time consuming but the bigger the gesture the more happiness you’ll feel!

Stuffed Mac and Cheese!


Can’t believe it’s already Sunday! Where on earth did the weekend go?!

I had my First green Monster today and it was pretty awesome! Thanks to Kristina for the idea!

Dinner last night  was just soooo freakin’ delicious…. After my 4.5 mile run I was craving carbs… good ‘ol  mac and cheese was on my  mind…. I still wanted to get some veggies in the mix so I made Stuffed Mac and Cheese with some Soy Protein!

This morning I woke up and made a Peach Smoothie for breakfast with Protein powder and goji cereal on top… kinda like funfetti in a bowl if you ask me! I used the Peach flavored Chobani yogurt that I received from Sami’s giveaway which made it super creamy and delicious!

Unconditional Love and a Mexican Fiesta!


Last night I decided to make Pete dinner after his long practice for an ABA professional basketball team  in Indiana… Mexican Fiesta was on my mind: :)

After the the Mexican Fiesta dinner Pete and I spent the night talking about life… I love nights like that… the T.V. was on in the background but we really weren’t paying too much attention to the movie we watched, “Above The Rim“…

We talked about our lives, where we see ourselves in the next couple years and what we want to be doing in the future. I am so proud of Pete for doing exactly what he wants to be doing in his life and enjoying it every step of the way. I  think I even sometimes look up to him for doing what truly makes him happy and disregarding other people’s view of him. I have trouble with disregarding other people’s thoughts of me, I wish I could be more like Pete and not care about whether or not people see me a certain way.

Pete is currently playing professional basketball and loves what he does, he explained to me that he feels lucky that he has been afforded the opportunity to take the time and play basketball professionally at the age of 27… It’s true that many guys at that age are working in cubicles  when he get’s to wake up everyday trying to improve his game and hopefully get a shot going to play overseas in Europe. I know he’s capable of doing this even though that means we would be in a long distant relationship at least I would know that all  of his efforts were rewarded the way he deserved them to be… His dedication to basketball mimics his dedication to our relationship so I guess I owe basketball a HUGE thanks LOL… He’s able to apply the dedication he has for playing professionally into our relationship which makes him an amazing person to be around.

Last night after his practice ended at around 10:30 he still came out to Illinois to come see me. Words can’t describe how much I appreciate his actions of driving a state away to come see me after a long day… How does your man make you feel appreciated in your relationship?

Besides hanging with Pete I decided to catch up a lot of much needed sleep on Thursday and Friday… Here are some pictures of what’s been Gettin in my belly the last couple days:

How does your man make you feel appreciated? For me, I know that I have a “good” catch (lol) because Pete’s willing to come out of his way to see me whenever I need to him to even though he lives  a state away. He’s there for me physically, mentally, emotionally and spiritually. I truly believe the each of our own happiness HEAVILY depends on seeing how happy we can make each other… as Robert Heinlein says,“Love is the condition in which the happiness of another person is essential to your own”

The Elements of Unconditional Selfless Love:

The Physical Factor: Being there” for someone physically means just what the word implies. You’re there for them in person, standing by their side, listening to them or talking with them so they’re not alone. This may be at two in the afternoon, or at three in the morning!

* The Emotional Factor: When you’re with someone emotionally, you’re offering your support by allowing them to honestly and openly express how they feel or their innermost thoughts without fear of judgment or ridicule Supporting someone emotionally with unconditional love also means that you’re there selflessly to help them work through any anxieties or fears that may be controlling their day-to-day life. The goal is for the person to rise above the negative emotions and turn them into positive ones. In a sense, you’re their “shoulder to cry on”.

* The Mental Factor: Supporting a loved one mentally or psychologically means that you’re helping them think through their actions, motives, and desires. You help them do this by finding out what’s going on inside. To support someone mentally requires you to help your loved one process their thoughts through to all possible outcomes.

* The Spiritual Factor: Spiritually supporting someone means you pray for and with them, to help them grow in all aspects of their life – physically, emotionally, mentally, and spiritually. Often spiritual support is given without a person being aware that it’s actually happening.

Motivation to workout?


Breakfast today kept me full for SO LONG! The Natrii Nature’s Greens was the trick I think:

Classes are starting to pile on the workload, which isn’t to bad because I actually am enjoying what I’m doing finally! I spent last night with Pete, unfortunately we didn’t end up going to redmango instead we hit up subway…. I got the Falafel which I just love!

After dinner I went with Pete to his game.

Afterward I just relaxed with Pete and did some work when he left back home for Indiana…. Sometimes, I forgot how much of a sacrifice he has to make to come and see me 4 or 5 times week considering he lives a state away… That’s love right there LOL…

On a totally different note, I was really happy with all the responses that you guys had to my “overreacting post”… I was wondering if there were any questions you guys have about me that you would like me to answer. I’m making a questions and answers page for my blog soon and I will be also using  some of the appropriate questions you guys have by handing out the answers to students (during clinical and observation work in inner city schools) in order for them to get to know me better. I will be posting your questions with my answers shortly afterward… You CAN ask me anything you want and I WILL answer…There’s no turning back now, ask away! :)

Today’s workout consisted of  a 4.5 mile run in 44 mins, and 20 mins of streching after. I felt totally great for running 4.5 miles on 4.5 hours of sleep. But,  tonight I need to catch up on zome ZzzZZzzzZZzz. While running today I thought to myself, What is it exactly that keeps me motivated to workout?…. I looked around me and it dawned on me… The motivation I have to workout stems from my past accomplishments… I keep my accomplishments in mind and push myself to continue to work harder every time I do work out… It also helps that my tredmill is literally next to the trophies my team and I won in various basketball tournaments (such as the Ahepa Marrow Tournament:

Overeacting?… Who? ME?!?


Today I woke up around my regular Tues/Thursday scheduled time, 6:15 am and fortunately I wasn’t exhausted… Class starts downtown in Chicago near the John Hancock around 8:30… I’m not a morning person but going to this class doesn’t bother me, like I’ve stated before my teachers are wonderful and so are my classmates… After class today I was really wanting to try Red Mango. I’m taking Megan and Maryann‘s advice and doing no-impact workout tomorrow because of my knees. Lana‘s advice to make sure that I go to a running specialty store for new shoes every 300-500 miles or 6 months is a must as well! Sami is having a giveway on her blog multigrain Cherrios giveaway to be exact check it out!

I read an article today before class about overreacting. I really enjoyed this article a lot. It made me think about the way I act and how to avoid over-reacting to remarks from people I love.

Barriers I need to overcome:

The triggering emotions…. There are four main triggering emotions for overreaction:

  • Envy
  • Rejection
  • resentment at being criticized
  • loss of control

Its apparent that even the most seemingly benign interactions may spark one of these responses and I think we are all culprits of acting like this at times… When these emotions occurring within us our “fight or flight response” is triggered and it limits our ability to reaction RATIONALLY or CONSTRUCTIVELY. When someone triggers these reactions within you, you begin to see this person as being “all good” or “all bad” at those specific moments and there is NO redeeming features that person has that can categories them in another categories except GOOD or BAD. I thought about that for a while and found that when someone triggers those emotions in me, at that moment, my whole perception of the person has changed and I immediately label that as a negative person. After this takes place a process known as “FLOODING” occurs.

Flooding: when EVERY OLD NEGATIVE EMOTIONAL MEMORY ASSOCIATED WITH THE PERSON OR SITUATION COMES BACK INTO YOUR THOUGHT PROCESS… how many of you guys can recall those flooding moments occurring when arguing with your mom, dad, sister, or boyfriend? I do, all the time. The “black or white” response (labeling a person as either fully good or bad) is intensified by flooding. Flooding pushes us to categorize people into “good or bad” even more. After flooding occurs you feel JUSTIFIED in having an outburst because you have convinced yourself that this person is completely good due to negative emotional memories you have recalled.

This process sound familiar? Yea, thought so.

How to cope this is some things I’ve put together and found from the article to help you cope with OVERREACTION.

Notice the body’s signals: Your Neck may get tense and your heart may start to pound due to anxiety. if you are IN TUNE with your body and recognize these signs you’ll be better able to shift emotional gears

Breathe: breathing consciously will help inturrupt the fight of flight response and change gears out of over reaction mode.

Asses your state: Feeling angry? sad? tired? ragged? or are you just experiencing lack of nutrition and low blood sugar. If you know that you maybe in a state of anger due to outside factors of the comment made withdrawl from the situation until you more centered and composed

(this is probably my FAVORITE STEP)…  NAME THE EMOTIONS:

Neurologically, overreaction is a Loss of access to the LEFT brain. “Naming the feeling that you’re having at that exact moment (anger,depressed, rage, loss of esteem) requires reflection and searching the memory and that is a LEFT brain activity. Therefore, searching for the name of the feeling reestablishes the neural networks that connect left brain and right, which RESTORES BALANCE!

Recast Criticism: Strive to re-frame the less than positive input as USEFUL information. In the face of criticism or what you view as an self esteem blow, ask yourself: What can I get from this feedback? How can I use this to improve myself or my situation? Did this person intend to hurt your feelings or did you put a negative spin on the interaction? The truth is sometimes people do say things to hurt us because the embody JEALOUSY, REJECTION, LOSS OF CONTROL or RESENTMENT OF BEING CRITICIZED themselves. Those people are the ones who we are better off without. When interacting with family or important people to us, it’s our jobs to realize that the interaction is NEVER intended to hurt us or break down our self-esteem down. I am a culprit of feeling rejection when being criticized, or when people state observations about the way I am/act/look. This is probably because I have always equated observational comments about who I am/how I act from people as negative when in fact observations can be positive too. I need to keep in mind that if a classmate of mine were to call me aggressive (for example) it doesn’t mean I’m overbearing or pushy toward other people it may in fact mean that I make an all out effort to win or succeed in the classroom:

Aggressive is defined as BOTH:

  • characterized by or tending toward unprovoked offensives, attacks, invasions, or the like; militantly forward or menacing: aggressive acts against a neighboring country.
  • making an all-out effort to win or succeed; competitive: an aggressive basketball player.

The first definition can be define as negative but the second is a quality I would love to possess.

Overall, it is simply our OWN CHOICE to take our interactions with people and assume the BEST in people’s words, not the worst. God would want us to assume the best in others, not the worst.

National Peanut Butter Day!!!


Made these Honey Peanut Butter Bars for National Peanut Butter Day (Which is today, January 24th)

I Made up this recipe myself!

Servings Size: 15 big granola bars (can cut them smaller if you want)

  • 3 cups Granola Cereal (Kashi works fine too)
  • 1/2 cup dried cherries
  • 1/4 cup raisins
  • 1/4  cup sliced almonds
  • 3/4 cup honey (or less it was a little to much!)
  • 1/4 cup Sucanat
  • 3/4 cup Peanut Butter
  • 1 teaspoon vanilla
    1. Mix  cereal, cherries, raisins and almonds in a large bowl. Set aside.
    2. In a saucepan, mix honey and Sucanat Bring to a boil while stirring. Add peanut butter and vanilla. Stir just to blend well.
    3. Pour the wet mixture into the bowl with the dry and mix mix mix!
    4. Pour the mixture into a 9 by 13 pan and let cool for 1 hour, Cut into bars and serve!
I ended up drizzling chocolate chips on top of the bars:

Yesterday I also made some appetizers before the Bears game (if you even call what  I watched a game, they might as well have not shown up!)

Dinner for my consisted of several pieces of Brushetta, Green Peppers, Veggy dip (made with Fage yogurt!) and sliced up Zucchini patties!

Did a 3 mile run in 26 mins today, had some discomfort in my knee though, time for ice :(

I had knee surgery when I was 8th grade after tearing my ACL, MCL and lateral meniscus. It really sucked coming back from that injury and I don’t wanna overdo it with my knee on the tredmill tomorrow… maybe some elliptical instead to take the pounding off my knee and of course some Meditation (the one healthy habit I WILL be doing!)… I tried it today, wasn’t a big success maybe later tonight before bed I’ll give it a shot!

“Funfetti in a bowl” and The Number One Healthy Habit You Should Be Doing


Ever have one of those days where everything bugs or annoys you? Well that was me today. The Bears loss didn’t really help my cause either… :( … I’ve been feeling today that I need to really start making sure that I am doing what makes me happiest with my body and stop listening to other people’s opinions of me. I feel like the best and most confident I feel is when I have curves but am still  “fit”… I’ve been feeling lately that all the cardio makes me feel good but I’m not happy completely losing my figure (curves) which I feel like running is doing. Also with running I’m not gaining muscle where I would like to… I really need to start to refocus my energy toward strengthening my body rather then constant cardio. I’m just not sure where to start….

On a better note, My late night snack was my favorite meal last night

Peaches and Pumpkin Butter Soft Serve AKA FUNFETTI!

  • 1/2 cup Almond Milk
  • 1 container Greek Yogurt
  • 2 tablespoons Pumpkin Butter
  • 1/2 cup frozen Peaches
  • handful of Blueberries (seems random but tasted really good!)

We all talk about how amazing cardio workouts and Strength Training are, but let’s be honest, sometimes we just don’t feel like getting up off the couch and getting all sweaty and gross. Even when we do get those heart-racing workouts into our daily routines do you ever say to yourself: “I wish relaxation become a form of exercise”….Well, who says it can’t? Lately, I’ve been  trying to refocusing my energy toward a new type of exercise… After reading an article in Self Magazine, I found that  meditation is the KEY to BOTH a healthy body and mind. Actually, the article claims it’s the, “Number one healthy habit you’re not doing….yet”. Only 13% of people that read Self meditate and I found that number to be way too low…After all, the magazine is called Self….Shouldn’t more women be meditating in order to shift their lives onto a path of inner peace and ultimately reach their true “self”? I think so… That’s why tomorrow my working out is going to include a 30 minute session of meditation, LESS CARDIO and more strengthening….. I think it’s about time to broaden my horizons for February!

Italiano and Some New Goodies


I just realized that my scale is broken this week :( …. I was kinda bummed but my mama decided to surprise me and Sophia with a new scale that has a Body Composition Scanner Built in! Homedics makes the model we bought and it measure several things after plugging in your height,age, sex and level of activity… after plugging in my information it measured me in several  categories:

Weight: 119

Body fat %: 12.7%

Body Water %: 63.7%

Muscle Mass %: 44.9%

Bone Mass %: 5.3%

According to the scale’s Chart in the manual, I’m a little too low on the body fat percent. Probably from all the running. Going to have to have to gain more muscle mass too! I think I’m going to love this scale! :)

I ran 2 miles this morning and wasn’t really feeling up to par so I decided to come downstairs from my workout area and have a nice hearty breakfast:

I will be hopping back on the tredmill later tonight after I get some work done but I was kinda depressed that my legs were just so  achy while running this morning, and what bugs me even more is I’m not really sure why; Maybe I’m lacking in protein or carbs in my meals? not sure though….Do you ever feel like your legs are totally achy when running? What do you think it’s a lack of? Any type of suggestions on what I can do to keep my long distance running up to par? Hopeful the heart meal I just had will fuel my run for later on! Gotta keep ya head up!

Last night Pete and I went to Via Veneto Italian restaurant near my house. After I decided to make some homemade guac!

We had some left over gift certificates from Via Veneto that we had received from the silent auction of the Ahepa Marrow Basketball Tournament . We decided to have some yummy italian food before going to see “Country Strong”. Pete ordered the Fagottini pasta which was the dish I had ordered the last time we went to the Via Veneto.

Stuffed purses with ricotta cheese, pears and smoked chicken in creamy broth sauce... Such a great dish!

Salmon Special for the night:

Salmon with veggies, baked potato and Soy dressing :) very tender, very good!

For dessert we shared the Pistachio Gelato:

Afterward we went to the movies and saw “Country Strong” which isn’t a movie worth me writing too much about lol… But Pete and I did take some movie theater pics :)

Personally, I didn’t think the movie was all that good, It was decent, but I wouldn’t mind if I never saw it again lol…

This morning, besides getting the amazing scale, I received these goodies in the mail from a high school acquaintance who’s working for an Organic company called Natrii.

A friend of My sisters sent me some new organic products to try out, these are the face cream "pills"

These capsules look like fishies! LOL The orange are to be used as night cream and the blue is the moisturizer. I've heard great things about this company and am pumped to try this out!

Homemade Tacos and LADIES night!


Decided to whip up some tacos last night after my 4 mile run in 39 minutes. I didn’t really run at a steady speed  for the 4 miles. Instead my workout consisted of sprinting, walking and jogging all at different time periods throughout the 39 minutes. I must have been doing the intervals right because I was drenched by the end :) . My speed was anything between 6-9 when running/jogging and I walked at a about 3.2 speed during intervals too.

I used Organic Lunberg rice and Chili Man’s Veggy Chili with Beans and then used my favorite low cal wrap for the soft taco shells…. I ended up topping the tacos off with mixed greens and tomatoes.

After Dinner I headed out with my girlfriends to a local bar to have some drinks and relax after a LONG week of school. Even though I enjoyed most of my classes getting up around 6 everyday isn’t something I’m used to yet. I NEEDED a night out.

Pondering what smoothie to make for breakfast haha, Food is always on my mind

 

This morning I work up and decided to make a new smoothie for breakfast:

Strawberry-Blueberry Smoothie with Protein

  • A hand full of blueberries
  • Four strawberries
  • Five ice cubes
  • A small container of Greek Yogurt
  • Half a scoop of Protein Powder

I was running late so I needed to gulp this down in the car….

Class was really enjoyable today. My teacher for “Teaching the Exceptional Child” has given us a lot of choice in our final project this year! He has allowed me to select an activity from one of the four quadrants that will improve an area of life (physical, intellectual, social or spiritual) He’s allowing me to make a workout plan for myself that I should try my best to follow and my final project is to assess my work much like I would assess the work of my students.

For this “Exceptional Child” final project I would also have to

Type up a reflection log stating: What did I think of the performance or activity? What was I exposed to that you were not familiar with previously? How did  completing this activity address any area of my own personal development/quality of life? Would access to activities like this be beneficial to my students (students of Special Needs)? I am excited to explain how I could maybe implement my program into an after school activity for kids one day. I’m really excited about this project and will be starting to organize the workout plan I will have myself and hopefully have some really great physical results when I’m finished by May.

Today was awesome. I’m so glad that I can finally take something I love (working out) and use it for a school project! :)
